Teriyaki Chicken

My friend Christa shared her ever-so-simple Teriyaki Chicken recipe with me and I can't believe how easy AND delicious it is. (Again, thank you Christa!)

Teriyaki Marinade

1/4 cup soy sauce
1/4 cup oil
1/2 cup Sprite
1/2 tsp minced garlic

(She said the longer you marinate the chicken the better is, although she has marinated chicken for just one hour and it was great.)

I placed the chicken in a large ziplock bag, added the marinade ingredients, sealed it and stuck it in the fridge. A few hours later I had wonderfully marinated chicken, no leaks, no garlic smell in my fridge, and no dish to wash.

This Teriyaki Chicken is perfect in the Oriental Chicken Wraps that I wrote about last week. Next week I'm going to use this same recipe in some Teriyaki Rice Bowls. Oooo - I can't wait!

(side note: I know this will reveal just how ridiculously particular I am, but I wanted to share what I learned today from Dictionary.com. Apparently "marinate" is a verb and "marinade" is a noun. I never knew that before today. And there you have it - a recipe and a spelling lesson all in one!)

Ok, so now that it's marinated...how do we cook it??

Wendy - Pretty much however you want. I have grilled it (propane bbq grill), "grilled" it in a George Foreman, cooked it on my stove top in a grill pan (see my post about the BBQ Club Sandwiches), and I've baked it. All cooking versions have turned out great.

I suppose next I should try cooking it in a slow cooker. That might be a nice option!

The last time the Oriental Chicken Wraps were on the menu, I made a huge batch of chicken and ate it for lunch all week. It was wonderful!

Thanks so much for sharing this with us. I am always up for a WAY easy recipe that doesn't use up a dishwasher full of dishes!

My mom has been making this recipe for years, and now it is my "go to" chicken recipe! I highly recommend it! It is so simple and so delicious!

Thanks Josh & Anna. I wish I would have known about this recipe years ago too!

I love this recipe! We have substituted Sprite with lots of other types of pop! It makes it a little more fun...just remember that the flavor will change and may not always be good!

Using lemon juice (bottle) instead of sprite also works. Yummy. I love this recipe.

Made this last night. We used a whole fryer with the skin & it didn't take the marinade too well. Will try again with boneless chicken breasts. Used the leftover chicken for Chinese Chicken Salad & Sesame Ginger Noodles.
