Pasta Primavera x2

This last week I tried a new Pasta Primavera recipe and we were instant fans of it! We ate every last drop of the pasta, and then used our bread to scoop up the remaining sauce. This week I'm trying another version of Pasta Primavera which uses a different combination of veggies, and also roasts them which will give a nice sweet flavor. The recipe for this week also doesn't include a cream sauce so quality ingredients are a must.

Alright, now I need some tips from you guys (including all of you lurkers). I have a big bowlful of apples on my table and I'm getting tired of eating plain ol' apple slices with every meal. Anyone have a great way to use up apples?

Okay, I have no business reading a cooking blog, yet alone posting an actual comment. However, here goes. I love to dip apple slices in peanut butter. I microwave a tablespoon or two of peanut butter for about 20 seconds, just until it softens, then dip the slices. I also have an excellent apple bread recipe. It is one of my favorites, because you don't peel the apples, just core and cut them into small pieces. It is a fun recipe in the Autumn after going to to pumpkin patch!
