What IS that?

Eggplant. Never tried one? Me neither. My son gaped in horror as I placed one into our shopping cart Saturday. "What is that, and do we have to eat it?" Even the check-out clerks had no idea what it was. Are they really that rare? I had no idea. Monday's meal is chock-full of eggplant, and I'll let you know what I think. Take into consideration that the innocent little eggplant will be absolutely smothered in a creamy, cheesy sauce. It has a better chance of getting rave reviews that way.

I can't wait to hear how this eggplant recipe goes. We have had only bad experiences with eggplant over here. I have made it twice and both times John has vomited violently.(makes you wonder why I made it the 2nd time) But I hope that doesn't turn you off to eggplant because Giada De Laurentiis always does such brilliant things with them. Hm. Violent vomit? John, I'd stay away from eggplant if I were you.

Brielle - what eggplant recipes have you tried?

This recipe actually turned out great. I made it in 2 single serving dishes (Mercer had PB&J) and I could almost fit the whole recipe into those 2 dishes. I really enjoyed the bit of marinara sauce at the bottom. I think next time I might layer some zucchini in there too.

Yeah, this recipe does look good. The first time I tried it was eggplant parmesean, the second was a sort of bruchetta with the eggplant acting as the bread. I think my problem is I don't get my grease hot enough, so the eggplant ends up soaking up to much and it makes John sick. Unfortunatly I don't think he will ever let me make it again. No matter how good the recipe. I'm glad it turned out well.

Hey Andy, maybe Mercer's sickness was the eggplant dinner and not our bug? Sorry for passing it along, it builds the immune system, right?
